Pupillary dilation is called mydriasis and is mediated by the sympathetic component of the nervous system. The sympathetic output is elicited by anything that causes arousal -- fear, emotion, surprise, etc. So, seeing someone you're attracted to clearly fits in this category, and results in sympathetic activation, which causes mydriasis of the pupils.The sympathetic system is also responsible for the other physiological manifestations of attraction, such as increased heart rate, nervousness, increased respiratory rate, etc.
